Grilled Pepper-crusted Chicken Breast

Chicken Breasts – 2, large
Dry Green Peppercorns – 1 1/4 tsp
Garlic Cloves – 2, thinly sliced
Hot Red Chilli – 1, deseeded and chopped
Spring Onion – 1, chopped
Salt – 1/2 tsp
Oil – 3 tblsp
Lime – 1, large

1. Cut each chicken breast into 1 cm slices.
2. Place on cling wrap and cover with more cling wrap.
3. Use a rolling pin to flatten the chicken without tearing it.
4. Pound the peppercorns in a mortar and add it to the bowl.
5. Pound garlic, chilli and onion to a paste with the salt.
6. Add the ground pepper and oil.
7. Brush over the chicken.
8. Grill the chicken for about 2 1/2 minutes, turning frequently and brushing with any remaining marinade.
9. Serve hot with lime wedges.
