Gujarati Dal Masala


Coriander Seeds – 1/4 cup
Cumin Seeds – 1/8 cup
Fenugreek Seeds – 1 tsp
Black Mustard Seeds – 1 tsp
Hot Chilli Powder – 1/4 cup
Turmeric Powder – 2 tblsp
Asafoetida Powder – 1 tsp

1. Mix coriander, cumin, fenugreek and mustard seeds in a pan.
2. Roast the seeds in a frying pan over moderate heat for 5 to 10 minutes, tossing frequently.
3. Let it cool completely.
4. Grind finely.
5. Mix in the chilli, turmeric and asafoetida powder.
6. Store in an airtight container.
7. Use as required.

Note: This will stay good for several weeks.
