Ingredients:
Noodles – 100 gms
Mixed Seafood – 300 gms
Capsicum – 1, small, chopped
Onion – 1, sliced
Ginger – few slices
Green Chilli – 1, chopped
Oil
Parsley – sliced
Coriander – sliced
Cucumber for garnish
For Sauce:
Chicken Stock – 1 cup
Soya Sauce – 1 tblsp
Cooking Sherry – 2 tblsp
Cornflour – 1 tsp
Sugar
Salt
Pepper
Method:
1. Mix the sauce ingredients in a bowl.
2. Cut the seafood into bite-sized pieces.
3. Deep fry the noodles without allowing them to change colour.
4. Remove from the oil and arrange in a dish.
5. Deep fry the seafood pieces.
6. Lightly fry the capsicum, green chilli, ginger and onion.
7. Pour in the sauce and when it begins to boil, add the fried seafood.
8. Pour over the noodles.
9. Garnish with cucumeber slices.
10. Serve hot.
