Chilli Cauliflower

Cauliflower – 1, cut into 1 inch florets
Oil – 1/3 cup
Ginger – 1 inch piece, sliced
Green Chillies – 3, cut into 4 to 5 pieces
Sprig Onions – 3, sliced
Vegetable Stock – 1 1/2 cups
Cornflour – 1 tsp
Salt as per taste
Sugar as per taste

1. Heat the oil in a frying pan.
2. Stir-fry the ginger and green chillies for a few seconds.
3. Add the cauliflower florets and fry for 4 to 5 minutes.
4.  Add the spring onions and stir-fry for 60 seconds.
5. Add the vegetable stock, salt and sugar.
6. Cover and cool.
7. When the cauliflower is tender but not overcoooked, add the cornflour blended with water.
8. Stir until well done.
9. Serve hot.
