Ingredients:
Spinach – 1 cup, cleaned and chopped
Brinjal – 1 cup
Onion – 1 cup
Red Chilli Powder – 1 to 2 tsp
Dhaniya Powder – 2 tsp
Turmeric Powder – 1/2 tsp
Green Chilli – 5
Tomato – 1 cup
Ginger Garlic Paste – 2 tsp
Red Chillies – 4
Oil
Mustard Seeds
Method:
1. Heat oil in a pan.
2. Add mustard seeds, red chillies, green chillies, onion and tomato.
3. Fry nicely.
4. Add the spinach and brinjal.
5. Mix well.
6. Add ginger garlic paste, turmeric powder, red chilli powder and dhaniya powder.
7. Sprinkle water and close with a lid.
8. After some time, open the lid and stir until it becomes a thick gravy.
9. Serve hot with rice or chapati.
