Aloo ki Sabji

Potatoes – 500 gms
Red Chilli Powder – 1/2 tsp
Turmeric Powder – a pinch
Salt – 1 tsp
Juice of 1/2 Lime
Onions – 3, medium, finely sliced
Green Chillies – 4, finely chopped
Coriander Leaves – 1/2 cup, finely chopped

For Seasoning:
Oil – 5 tblsp
Mustard Seeds – 1/2 tsp
Curry Leaves – 8

1. Boil the potatoes till tender.
2. Peel and mash them coarsely.
3. Mix the red chilli powder, turmeric powder, salt and lime juice.
4. Heat oil in a pan on moderate heat.
5. Add the mustard seeds and curry leaves.
6. Add the onions and fry till they turn transparent.
7. Add the potatoes and green chillies.
8. Stir them gently along with the curry leaves, mustard seeds and onion.
9. Garnish with coriander leaves.
10. Serve with plain rice or with chapati.
