Sarson Champ Biryani is my go-to recipe when I want to impress guests with something different from regular biryani. The magic lies in its mustard-based marinade, which gives the mutton chops an incredible depth of flavor. I learned this recipe from my grandmother, and it’s been a family favorite ever since. The combination of tender meat and fragrant rice creates a dish that’s both comforting and exciting.
About the Recipe
This recipe stands out because it uses mustard seeds as its key flavoring ingredient – a twist that sets it apart from traditional biryanis. The unripe papaya paste in the marinade helps tenderize the meat, while the blend of spices creates layers of flavor. It’s easier to make than you might think, and the pressure cooker method saves time without compromising on taste.
Why You’ll Love This Recipe
You’ll love how the mustard adds a unique kick to the traditional biryani flavor. The meat turns out incredibly tender thanks to the papaya paste marinade, and the pressure cooker method means you don’t have to spend hours in the kitchen. The rice soaks up all the wonderful flavors from the meat and spices, making each grain tasty. Plus, the recipe is straightforward enough for home cooks of any skill level.

Frequently Asked Questions
Can I use lamb instead of mutton chops?
Yes. Lamb works great as a substitute. Just adjust cooking time down by 5 minutes as lamb typically cooks faster than mutton.
How spicy is this biryani?
The heat level is moderate. You can adjust it by changing the number of green chilies or removing their seeds.
Can I make this without a pressure cooker?
Yes, but you’ll need to increase cooking time. Cook meat for about 45 minutes in a heavy pot, then follow the rice cooking steps.
