Kaleji ka Salan

Hyderabadi Liver Curry is a very popular dish.

Ingredients:
Liver – 500 gms
Ginger – 1 tsp, ground
Garlic – 1 tsp, ground
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Salt as per taste
Curd – 3/4 cup
Oil – 1/2 cup
Onions – 2, finely sliced
Coriander – 1 1/2 tsp, dry roasted and ground
Water as required
Mint Sprigs – few

Method:
1. Remove the membranes from liver.
2. Wash well and cut liver into 1 inch pieces.
3. Mix ginger, garlic, red chilli powder, turmeric powder, salt and curd with liver.
4. Leave to marinate for 15 minutes.
5. Heat oil in a pan.
6. Fry onions brown.
7. Add liver, saute well till water dries.
8. Add coriander and continue to saute for a few minutes.
9. Add 2 cups of water and simmer on a slow fire till the liver is cooked.
10. Add more water if necessary.
11. Keep about 1 cup gravy.
12. Garnish with mint sprigs.
13. Remove from fire.
14. Serve with chapati or paratha.
