Til Jhinga (Crispy Sesame Prawns) Recipe

Crispy Sesame Prawns
Ingredients:
King Prawns – 500 gms, shelled, deveined
Sesame Seeds – 1/8 cup
Breadcrumbs – 1/4 cup, powdered, dried
Lemon Wedges

Marinade #1

Ginger Garlic Paste – 4 tsp
Red Chilli Powder – 1/2 tsp
Lemon Juice – 1/2 tsp

Marinade #2
Ajwain – 1/2 tblsp
Cheddar Cheese – 2 tblsp, grated
Cream – 2 tblsp
Cardamom Powder – 1/4 tsp
Mace Powder – 1/4 tsp
Besan Flour – 2 tblsp, roasted
Yogurt – 1/4 cup

Method:
1. Combine all the ingredients for marinade #1 in a bowl.
2. Marinate the prawns in this mixture for 45 minutes and gently squeeze to remove excess moisture.
3. Mix the ingredients for marinade #2 and marinate the prawns for another 45 minutes.
4. In a small flat bowl, mix the breadcrumbs and sesame seeds.
5. Roll the prawns in this mixture and coat evenly.
6. Now keep the prawns in the fridge for 20 minutes.
7. Heat oil in a deep frying pan over low heat.
8. Fry the prawns in small batches for a minute.
9. Remove and keep aside. Repeat until all prawns are cooked.
10. Now add all the prawns to the hot oil and deep fry till crisp and golden.
11. Remove and drain excess oil.
12. Garnish with lemon wedges.
13. Serve hot.
