Greens Ambat

Ingredients:
Mixed Greens – 3 cups, chopped
Ginger – 1/2 tsp, chopped
Salt to taste

For Seasoning:
Oil – 2 tsp
Mustard Seeds – 1/2 tsp
Green Chillies – 1 to 2, chopped (optional)
Garlic – 3 cloves, crushed

For Masala:
Coconut – 3 tblsp, grated
Red Chillies – 1 to 2
Tamarind – a small ball

Method:
1. Boil greens with salt and ginger, set aside.
2. Fry in 1 tsp oil the red chillies, add coconut and tamarind.
3. Grind to paste.
4. Heat oil, add mustard seeds and when done, the chillies and garlic.
5. Fry till garlic is browned.
6. Add cooked greens, ground paste, mix well and simmer for 1 to 2 minutes.
7. Serve with rice or rotis.
