A delicious, colourful and tasty Chinese style soup with lots of vegetables.
Ingredients:
French Beans – 1/4 cup, finely chopped
Carrots – 1/4 cup, finely chopped
Cabbage – 1/4 cup, finely chopped
Capsicum – 1/4 cup, finely chopped
Mushrooms – 1/4 cup, finely chopped
Spring Onions – 1/4 cup, finely chopped + few for garnish
Coriander Leaves – 2 tblsp, finely chopped
Green Chillies – 2 tsp, finely chopped
Garlic – 2 tsp, finely chopped
Ginger – 2 tsp, finely chopped
Black Peppercorns – 2 tsp
Soy Sauce – 2 tblsp
Water – 4 cups
Corn Flour – 1/2 cup, mixed with 1 cup warm water
Oil – 1/4 cup + 2 tblsp
Salt as per taste
To garnish:
Noodles – handful, soaked, drained, fried until crisp (optional)
Method:
1. Heat oil in a pan.
2. Stir-fry the ginger, garlic, coriander and green chillies for a minute.
3. Add all the vegetables and black peppercorns.
4. Stir-fry for 2 more minutes.
5. Add soy sauce, salt and water.
6. Bring to a boil and reduce flame to low.
7. Add the corn flour paste and stir till the soup starts to thicken.
8. Remove from flame.
9. Garnish with spring onions and some crispy noodles (if available).
10. Serve.
