Ingredients:
Mixed Vegetables – 2 cups (beans, carrot, capsicum, peas etc.)
Potato – 1
Gingelly Oil – 100 ml
Salt – 1 tblsp
Mustard Powder – 1/2 tsp
Fenugreek (Vendhayam) Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Red Chilli Powder – 50 gms
Vinegar – 1/4 tsp
Method:
1. Finely chop all the vegetables and steam cook.
2. Heat oil in a pan.
3. Add the vegetables, salt, turmeric powder, red chilli powder and mix well.
4. Add mustard powder and fenugreek powder.
5. Stir to mix well.
6. Add vinegar and mix again.
7. Cook for a minute and transfer to a clean, sterilized jar.
