Apple and Apricot Cake
Ingredients:
Egg – 1, large
Almond Essence – 1/4 tsp
Maida – 125 gms
Baking Powder – 1/2 tsp
Caster Sugar – 125 gms
Butter – 75 gms, melted
Apples – 125 gms, peeled, cored, thickly sliced
Apricots – 50 gms, dried, chopped
Almonds – few, flaked for topping

Method:
1. Combine the maida, baking powder, sugar, egg, almond extract and butter in a bowl.
2. Mix well and beat for 30 to 45 seconds.
3. Now add the apples and apricots.
4. Mix gently.
5. Transfer the mixture to a greased deep cake tin, lined with baking sheet, and sprinkle the almonds on top.
6. Bake in a preheated oven at 160C for 60 to 75 minutes or until golden and firm.
7. Remove and keep aside to cool.
8. Remove the baking sheet and transfer to a plate.
9. Cut into slices and serve.
