Ingredients:
Lobster – 800 gms, cleaned
Salt to taste
Ajinomoto – 1 tsp
Egg – 1, whisked
Cornflour – 2 tbsp
Oil – 3/4 cup
Garlic – 20 gms, chopped
Capsicums – 40 gms, chopped
Onions – 40 gms, chopped
Mushrooms – 40 gms, chopped
Black Beans – 40 gms
Red Chilli Paste – 10 gms
Chicken Stock – 8 tsp
Soy Sauce – 4 tsp
Sesame Oil – 2 tsp
Chinese Wine – 1 tsp
Method:
1. Remove the lobster meat from the shell and cut into pieces.
2. Keep the shell aside.
3. Marinate with salt, 1/2 tsp of ajinomoto, cornflour and egg.
4. Heat 1/2 tsp oil in a kadai and fry the lobster shells.
5. Keep aside.
6. In the same kadai, fry the marinade lobster, drain the excess oil and keep aside.
7. In a separate kadai, heat the remaining oil and saute the garlic.
8. Add the vegetables, black beans, red chilli paste, chicken stock, soy sauce, salt, the remaining ajinomoto and lobster.
9. Mix well and cook for 2 minutes on medium heat.
10. Stir in the cornflour dissolved in water.
11. Add the sesame oil and Chinese wine.
12. Carefully transfer the preparation into the lobster shell and serve.
