Ingredients

  • 1/2 kg Purple Brinjals (round)
  • 1/2 tsp Turmeric Powder
  • Tamarind (1 small ball)
  • Salt to taste

  • 4 to 6 tbsp Sesame Seed Oil
  • 1/2 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • 2 sprigs Curry Leaves

Fry in 2 tsp Oil and Grind to a Powder:

  • 2 tbsp Coriander Seeds
  • 1 tbsp Chana Dal
  • 1 tbsp Urad Dal
  • 3 to 4 Red Chillies (dried)
  • 1/2 tsp Fenugreek
  • Asafoetida (1 small piece)
  • 2 tbsp Grated Copra (optional)

  • Wash and slit brinjals into fours up to the end of the stalk without breaking the stem.
  • Boil tamarind in water, extract it, and set it aside.
  • Mix salt with the powdered masala and stuff the brinjals carefully. Reserve any leftover masala.
  • Heat oil, add mustard seeds, urad dal, and curry leaves. Once done, add brinjals carefully.
  • Stir fry on low heat, turning them occasionally. Sprinkle leftover masala.
  • Cover and cook until brinjals are soft. Add tamarind extract and additional salt (if needed), and stir.
