Mutton Chilli Masala

Ingredients:
Green Chillies – 10
Mutton – 500 gms
Cumin Seeds – 1 tsp
Onion Seeds – 1 tsp
Coriander Leaves – 1 cup
Oil – 100 ml
Salt to Taste
Onions – 2
Tomatoes – 2

Grind together:
Turmeric Powder – 1 tsp
Chilli Powder – 2 tsp
Aniseeds – 1 tsp, ground to a paste
Garam Masala Powder – 1 tsp
Poppy Seeds – 1 tsp
Ginger Garlic Paste – 1 tbsp
Sesame Seeds – 1 tsp
Tamarind Extract – 1/2 cup

Method:
1. Marinate mutton in the ground masala and salt for 30 minutes.
2. Heat 5 tbsp oil in a pressure cooker.
3. Add cumin and onion seeds.
4. When they pop, add the mutton with masala.
5. Fry till masala and oil separate.
6. Add 2 cups of hot water.
7. Pressure cook till meat is done, about 15 minutes.
8. Heat 2 tbsp oil in a pan and fry whole slit chillies till soft.
9. Add to the meat and simmer.
10. Garnish with coriander leaves.
11. Serve with rice.
