Elephant Yam Double Beans Kuzhambu

Sambar Onions – 50 gms, peeled, chopped
Tomatoes – 1/2 cup, chopped
Double Beans – 50 gms, chopped
Elephant Yam – 100 gms, chopped
Sambar Powder – 3 tsp
Coconut – 1/4 cup
Cumin Seeds – 1/2 tsp
Urad Dal – 1/2 tsp
Fenugreek Seeds – 1/2 tsp + 1/2 tsp
Mustard Seeds – 1 tsp
Tamarind Extract – 1 cup
Garlic – 2 cloves
Green Chilli – 1, chopped
Dry Red Chilli – 1, chopped
Gingelly Oil – 1/4 cup
Salt as per taste

1. Heat 1/2 tsp oil in a pan over medium flame.
2. Add the onions, tomatoes, cumin seeds, garlic and coconut.
3. Saute well for 2 minutes and grind to a smooth paste.
4. Add 1 tsp oil to the pan.
5. Add the mustard seeds, urad dal, 1/2 tsp fenugreek seeds, green chillies and dry red chillies.
6. Fry for a minute.
7. Add sambar powder, ground paste, tamarind extract and salt.
8. When it starts to boil, add the beans and elephant yam pieces.
9. Cook for 2 to 3 minutes.
10. Garnish with coriander leaves and curry leaves.
11. Serve with rice.
