Ingredients:
Baby Corn - 10
Tofu - 200 gms
Tomato Mint Sauce - 1 1/2 tblsp
Small Onions - 10, peeled
Garlic Cloves - 6, peeled
Ginger - 1/2 inch piece
Long Red Chillies - 3, soaked in water
Salt to taste
Corn Flour - 1 tblsp
Oil - 1 tblsp
Method:
1. Slice the baby corn in middle and cut into 4 long pieces.
2. Soak them in hot water for 2 minutes and drain.
3. Grind ginger, garlic and soaked chillies to a fine paste.
4. Chop the onions finely.
5. Cut tofu into length wise finger sized pieces.
6. Heat oil in a pan and fry onions.
7. Add ground paste and fry for a minute.
8. Add tofu, baby corn and stir fry.
9. Mix sauce, cornflour, salt with 1/2 cup of water together and pour over the pieces.
10. Stir until moisture evaporates and then serve.
