This is a simple, delicious and healthy dish that can be served with plain rice for lunch or dinner.
Ingredients:
Tofu – 125 gms, drained, cubed
Ginger – 1/2 inch piece, sliced
Garlic – 1 big clove
Carrot – 1, cut into sticks
Mushrooms – 100 gms, sliced
Cabbage – 100 gms, finely chopped
Broad Beans – 50 gms, halved
Spring Onions – 2 to 3, sliced
Baby Spinach – 50 gms
Lemon Juice – 1 tsp
Sugar – 1/4 tsp
Dark Soy Sauce – 2 tsp
Plain Vinegar – 1 tsp
Sesame Oil – 1/4 tsp
Sunflower Oil – 1 1/2 tblsp
Method:
1. Heat 1/2 tblsp of oil in a lage pan over medium flame.
2. Add the tofu pieces and stir-fry for a minute.
3. Remove and keep aside.
4. Add the remaining oil to the pan.
5. Add the ginger, garlic, carrot and beans.
6. Stir-fry for 2 minutes or until tender.
7. Add the mushrooms, spring onions, cabbage and spinach.
8. Stir-fry for a minute.
9. Add the tofu to the pan.
10. Add lemon juice, soy sauce, sugar, vinegar, sesame oil and mix well.
11. Remove and serve with rice.
Tip: You can add any vegetables you want.
