Chicken and Mushroom Soup

Creamy Chicken and Mushroom Soup
Ingredients:
Chicken Breast – 1/2 cup, cubed, cooked
Butter – 1/8 cup
Onions – 1/4 cup, chopped
Mushrooms – 100 gms, sliced
Red Capsicum – 1/4 cup, chopped
Maida – 1/8 cup
Chicken Stock – 1 1/2 to 2 cups
Dry White Wine – 1 tblsp
Thyme – 1/4 tsp, dried
White Pepper Powder – a small pinch
Sour Cream – 1/4 cup
Salt as per taste

Method:
1. Heat a pot over medium flame.
2. Add the butter and add onion, mushrooms and capsicums once the butter has melted.
3. Saute until tender, for about 4 minutes.
4. Add the maida and chicken stock.
5. Stir well until thickened.
6. Add wine, thyme and white pepper powder.
7. Add the cubed chicken pieces and simmer for 10 minutes.
8. Remove the pot from flame.
9. Add the sour cream and mix well.
10. Place the pot over low flame and cook till it is hot. Ensure it does not boil.
11. Serve in soup bowls.
