Andhra Prawn Curry (Royyala Pulusu) Recipe

Ingredients:
Prawns – 1 kg, medium size, shelled and deveined
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 2 tsp
Oil – 1 cup
Salt as per tastte
Coconut – 1, ground
Green Chillies – 8, slit lengthwise
Onions – 5 to 6, medium, sliced finely
Ginger – 2 tsp
Garlic – 2 tsp, crushed
Coriander  Powder – 2 tsp
Cumin Powder – 2 tsp
Coconut Milk – 1 1/2 to 2 cups
Cloves – 6 to 8
Pepper Corns – 8 to 10
Mint Leaves – handful, chopped
Curry Leaves – few, chopped
Tomatoes – 3 to 4, chopped
Water
Coriander Leaves – handful, for garnishing

Method:
1. Mix the turmeric powder, red chilli powder and salt.
2. Marinate the prawns in this mixture.
3. Heat oil in a pan.
4. Add the onions and fry onions lightly.
5. Add the marinated prawns and fry on low heat for 3 to 5 minutes.
6. Add ginger, garlic, coriander, cumin and fry for 2 to 3 minuttes.
7. Add coconut milk and ground coconut, green chillies, cloves, peppercorns, mint and curry leaves.
8. Simmer for about 5 minutes.
9. Add the chopped tomatoes.
10. Simmer for 8 to 10 minutes adding 1 to 1 1/2 cups of water if required.
11. Remove from heat.
12. Garnish with coriander leaves.
13. Serve hot with roti or rice.
