Stuffed Milagai Bajji


Bajji Chillies (Bangalore Milaga/Chillies) – 200 gms
Potatoes – 100 gms
Besan – 250 gms
Ajwain – 1 tsp
Mustard – 1 tsp
Soda – 1 pinch
Turmeric – 1 pinch
Oil – to deep fry

1. Heat 2 tsp of oil and add mustard seeds.
2. When it pops, add a pinch of turmeric powder, salt and 2 cups water.
3. When it boils, add boiled and mashed potatoes and stir constantly to make a non-sticky paste.
4. Take bajji milagai and make a longitudinal cut on it.
5. Remove the inside portion.
6. Soak these in boiling water for 5 minutes.
7. Stuff the chillies.
8. Prepare batter with besan, salt, soda and asafoetida.
9. Dip the chillies in batter and deep fry.
