Spiced Cauliflower Recipe

Cauliflowers – 5, small, whole and de-stemmed
Oil for frying
Onions – 1 cup, chopped
Cashewnuts – 1/2 cup
Green Cardamoms – 6
Turmeric Powder – 1 tsp
Red Chilli Powder – 2 tsp
Ginger Paste – 5 tsp
Garlic Paste – 5 tsp
Garam Masala – 2 tsp
Yoghurt – 1 cup, whisked
Salt to taste
Butter – 2 tbsp
Lemon Juice – 1 tbsp
Mace Powder – 1/2 tsp

1. Wash and clean the cauliflowers.
2. Heat oil in a kadai.
3. Deep fry each cauliflower over medium heat until almost cooked.
4. In the same oil, fry onions and cashewnuts (saving a few for seasoning).
5. Grind to a fine paste.
6. Heat 5 tbsp oil in a pan.
7. Add cardamoms and saute for a few seconds.
8. Add turmeric powder, red chilli powder, ginger garlic pastes and garam masala and cook for 30 seconds.
9. Add onion cashewnut paste and whisked yoghurt.
10. Cook for 10 minutes on low heat and season with salt.
11. Arrange the fried cauliflower.
12. Bake in a moderate oven of 175C/350F for 10 minutes.
13. Garnish with fried Cashewnuts, melted butter, lemon juice and mace powder.
14. Serve hot.
