  • 450 g Spinach (thawed, fresh or frozen)
  • 2 tbsp Oil
  • 2 medium Onions (diced)
  • 6-8 Curry Leaves
  • 1/4 tsp Onion Seeds
  • 1 tsp Garlic (crushed)
  • 1 tsp Fresh Root Ginger (grated)
  • 1 tsp Chilli Powder
  • 1 tsp Salt
  • 1 1/2 tsp Ground Coriander
  • 1 large Red Pepper (seeded and sliced)
  • 1 1/2 cups Mushrooms (roughly chopped)
  • 1 cup Ricotta Cheese
  • 2 tbsp Fresh Coriander Leaves

Instructions

  • If using fresh spinach, briefly blanch it in boiling water and drain thoroughly. If using frozen spinach, make sure to drain it well. Set the spinach aside.
  • In a kadai (or a wok), heat the oil and add the diced onions, curry leaves, and onion seeds. Sauté for 1-2 minutes until the onions are tender and aromatic.
  • Stir in the crushed garlic, grated ginger, chilli powder, salt, and ground coriander. Continue to stir-fry for another 2-3 minutes, allowing the spices to bloom and infuse the mixture.
  • Add half of the red pepper slices and all of the chopped mushrooms. Stir-fry for an additional 2-3 minutes until the mushrooms become tender.
  • Now, introduce the prepared spinach and stir-fry for 4 to 6 minutes, allowing the flavors to meld together.
  • Add the ricotta cheese and half of the fresh coriander leaves. Stir well to incorporate.
  • Finish by garnishing the dish with the remaining red pepper slices and the remaining fresh coriander.
