Broccoli Cheddar Soup

A perfect dish for the cold, winter nights the Broccoli Cheddar Soup is simple, easy to make and delicious.
Broccoli Cheddar Soup

Ingredients:
Broccoli – 2 cups, roughly chopped
Cheddar Cheese – 1 1/2 cup, shredded
Butter – 2 tblsp, unsalted
Onion – 1/2, small, diced
Carrot – 1/4 cup, diced
Garlic – 1 cloce, minced
Maida (Plain Flour) – 2 tblsp
Vegetable Stock – 500 ml
Condensed Milk – 1 cup, unsweetened
Salt as per taste
Dried Thyme – 1/4 tsp
Black Pepper Powder – 1/4 tsp

Method:
1. Melt butter in a nonstick pan over medium flame.
2. Add the onions and carrots.
3. Cook for 4 minutes or until tender.
4. Add garlic, stir and cook for 30 to 45 seconds.
5. Add the flour and cook for another minute or two.
6. Gradually add the vegetable broth and bring to a boil.
7. Cook for 5 to 8 minutes or until it has thickened.
8. Add the broccoli, condensed milk, salt, thyme and pepper powder.
9. Cook for 10 minutes.
10. Add the cheese and cook until melt and smooth.
11. Serve warm with bread of choice.
