A flavourful and delicous Thai style noodles with chicken curry. Easy to make, it is a great choice for dinner.
Ingredients:
Chicken – 150 gms, skinless, boneless, chopped
Coconut Oil – 1/2 tblsp
Sambar Onions (Shallots) – 3 tsp, finely chopped
Garlic – 1 1/2 tsp, finely chopped
Ginger – 1/2 tsp, minced
Lemon Juice – 2 to 3 tblsp
Cooking Wine – 4 to 5 tsp
Noodles (or Spaghetti) – 150 gms
Coconut Milk – 1/2 cup
Green and Red Capsicum – 1/4 cup, chopped
Thai Fish Sauce – 3 tsp
Method:
1. Heat oil in a pan over medium flame.
2. Saute the onions for a minute or two.
3. Add ginger and garlic. Stir well and saute for 15 seconds. Add lemon juice and mix.
4. Add the chicken pieces and stir-fry for a minute.
5. Add the wine and cook for 20 to 30 seconds.
6. Now add the noodles, 1 cup of water and 1/4 cup of coconut milk.
7. Cook for 10 minutes or until the pasta is al dente.
8. Add the remaining coconut milk and capsicums.
9. Stir well.
10. Add the fish sauce and stir.
11. Cook for a minute or two.
12. Remove from flame
13. Serve.
