  • 1 Onion small, finely chopped
  • 1 Garlic Clove finely chopped
  • 1 Capsicum small, diced
  • 1/2 tsp Mexican Chilli Powder
  • 1/2 tsp Cumin Seeds
  • 250 g Firm Tomatoes chopped
  • 1 cup Vegetable Stock
  • 200 g Red Kidney Beans (Rajma) soaked in water
  • 100 g Sweet Corn Kernels
  • handful Coriander Leaves chopped
  • as required Olive Oil as required

To Serve

  • 3 tsp Sour Cream
  • 1 or 2 Tortillas


  • Cook the sweet corn kernels until soft.
  • Drain well, rinse under cold water and drain again.
  • Drain the kidney beans, rinse under cold water and drain again.
  • Heat little oil in a pan over medium flame.
  • Saute the onions and garlic for 2 to 3 minutes or until softened.
  • Add the capsicum, chilli powder and cumin seeds.
  • Stir well and cook for 2 to 3 minutes.
  • Add the tomatoes, vegetable stock, kidney beans, sweet corn and 1 cup of water.
  • Cover the pan with a lid and bring to a boil.

  • Add the coriander leaves and stir.
