- 1 Onion small, finely chopped
- 1 Garlic Clove finely chopped
- 1 Capsicum small, diced
- 1/2 tsp Mexican Chilli Powder
- 1/2 tsp Cumin Seeds
- 250 g Firm Tomatoes chopped
- 1 cup Vegetable Stock
- 200 g Red Kidney Beans (Rajma) soaked in water
- 100 g Sweet Corn Kernels
- handful Coriander Leaves chopped
- as required Olive Oil as required
- 3 tsp Sour Cream
- 1 or 2 Tortillas
