Spicy Thukkada, also known as diamond cuts or diamond biscuits, is a beloved Indian snack that brings back memories of afternoon tea with family. I learned this recipe from my grandmother, who always kept a jar ready for unexpected guests. The dough comes together quickly, and the satisfaction of cutting perfect diamond shapes makes the process enjoyable. The aroma of pepper and asafoetida fills the kitchen as they fry to a golden crisp.

out the Recipe

This recipe makes basic pantry ingredients into crunchy, flavorful biscuits that pair perfectly with tea or coffee. The dough requires minimal kneading, and you can adjust the spice level to your taste. I always make a double batch because they disappear so quickly. The ghee in the dough ensures the biscuits stay crispy for weeks.

Why you will love this recipe

The simplicity of this recipe makes it ideal for both beginners and experienced cooks. You don’t need special equipment; all you need is a rolling pin and a knife. The dough is forgiving and easy to work with, while the frying process is straightforward. These biscuits offer a satisfying crunch with every bite, and their diamond shape makes them look professionally made.

Cooking Tips

Roll the dough to even thickness for uniform cooking. Test the oil temperature by dropping a small piece of dough; it should rise to the surface gradually with gentle bubbles. Maintain medium heat throughout frying to make sure the biscuits cook evenly without burning. I always pat them with paper towels while still warm to remove excess oil.

Serving and Storing Suggestions

Makes about 40 pieces. Prep time: 30 minutes. Cooking time: 20 minutes. Store in an airtight container at room temperature for up to 3 weeks.

Serve as a tea-time snack or add to savory mixture. They also make excellent holiday gifts when packed in decorative jars.

Nutrient Benefits

When made with wheat flour, these biscuits provide whole grain goodness. The asafoetida aids digestion, while black pepper offers antioxidant properties. Using ghee adds beneficial fatty acids. Though fried, portion control makes them a reasonable occasional treat within a balanced diet.

Frequently Asked Questions

Can I bake these instead of frying?

While possible, baking will not achieve the same crispy texture. If baking, brush with oil and cook at 350°F (175°C) for 15-20 minutes.

How thick should I roll the dough?

Roll to about 2-3mm thickness. Too thin will make them burn quickly, too thick will leave them raw inside.

Why did my biscuits become soft after storing?

This usually happens if they were not fried at the right temperature or if the container was not airtight. Make sure complete cooling before storing.
