Ingredients

  • 175 gms Shrimps (peeled, deveined)
  • 1/4 cup Small Onions (sliced)
  • 1/2 cup Asparagus (cut into bite-sized pieces)
  • 1 1/2 tbsp Thai Sweet Chilli Sauce
  • 1 tbsp Lime Juice
  • 1/2 tbsp Ginger (minced)
  • 1 tbsp Tamarind Concentrate
  • 1/4 cup Spring Onions (chopped)
  • 1/4 cup Cherry Tomatoes (halved)
  • 1/4 tsp Black Pepper Powder
  • 1 tbsp Oil
  • 1 tbsp Fish Sauce
  • 1/2 tbsp Sugar
  • 1/8 cup Coriander Leaves (chopped)

Instructions

  • In a bowl, combine fish sauce, sugar, pepper powder, and 1/2 tbsp of oil.
  • Marinate shrimp in this mixture for 30 minutes.
  • Heat a large pan over a high flame and add the remaining 1/2 tbsp of oil.
  • Stir-fry shrimp, small onions, and ginger for 2 minutes.
  • Add asparagus and cook for an additional minute.
  • Cook until shrimp and asparagus are almost done.
  • Introduce sweet chilli sauce, tamarind concentrate, lime juice, and spring onions. Mix well.
  • Toss in cherry tomatoes and coriander leaves.
  • Stir and remove from heat. Transfer to a serving plate.
  • Serve hot with cooked rice.
