Chilli Beef Stir-fry Salad Recipe

Ingredients:

  • Lean Sirloin or Top round Steak – 450 gms
  • Garlic – 2 cloves, crushed
  • Chilli Powder – 1 tsp
  • Salt – 1/2 tsp
  • Coriander – 1 tsp, ground
  • Avocado – 1 ripe
  • Sunflower Oil – 2 tblsp
  • Canned Red Kidney Beans – 425 gms, drained
  • Cherry Tomatoes – 175 gms, halved
  • Tortilla Chips – 1 large packet
  • Iceberg Lettuce – 1 head, shredded
  • Fresh Cilantro – handful, chopped,

Method:

  1. Using a sharp knife, slice the beef into thin strips.
  2. Place the garlic, chilli powder, salt and ground coriander in a large bowl.
  3. Mix until well combined.
  4. Add the strips of beef to the mixture and toss well to coat.
  5. Using a sharp knife, peel the avocado and remove the pit.
  6. Slice the avocado lengthwise and then crosswise to form small dice.
  7. Heat the oil in a large preheated pan.
  8. Add the beef and cook for 5 minutes, tossing frequently.
  9. Add the kidney beans, tomatoes and avocado.
  10. Heat through.
  11. Spoon the beef mixture into bowls.
  12. Garnish  with the fresh cilantro.
  13. Serve with bowls of tortilla chips and iceberg lettuce.
