Ingredients:
Prawns – 250 gms, deveined, tails and head intact
Bean Sprouts – 1/2 cup, trimmed (optional)
Ginger – 1/2 inch piece, grated
Lemongrass – 1/2 stalk, white part only, finely chopped
Garlic – 1 clove, finely chopped
Juice of 1 Lime
Fish Sauce – 2 tblsp
Peanut Oil – 1 tblsp
Cucumber – 1, small, cut into strips
Carrot – 1, small, peeled, finely chopped
Thai Basil Leaves – 1/4 cup, chopped
Mint Leaves – 1/4 cup, chopped
Brown Sugar – 2 tblsp
Coriander Leaves – 1/4 cup
Method:
1. Mix 1/2 tblsp oil, 1 tblsp of fish sauce, 1 tblsp brown sugar, ginger, garlic and lemongrass.
2. Mix well.
3. Add the prawns and toss well.
4. Keep aside for 20 to 30 minutes.
5. Heat 1/2 tblsp oil in a pan.
6. Add the marinated prawns and cook until done and they start to change colour, about 2 minutes.
7. Remove and keep aside.
8. In a bowl, mix the lime juice, fish sauce and brown sugar.
9. Add the carrots, coriander leaves, mint leaves, basil leaves, cucumber and bean sprouts (if using) to a large bowl.
10. Add the prawns and pour the dressing over.
11. Toss well and serve at once.
