Ingredients:
Mushrooms - 200 gms
Olive Oil - 2 tblsp
Garlic Flakes - 5
Dry Oregano - 1 tsp
Refined Flour - 2 tblsp
Parsley - 1 small bunch
Milk - 2 cups
Salt - 3/4 tsp
Black Pepper - 1/2 tsp, freshly ground
Mozzarella Cheese - 1 cup, grated
Fusilli Pasta - 2 cups
Method:
1. Wash the mushrooms and slice them.
2. Heat the oil in a pan over high heat.
3. Saute the mushrooms until they turn light brown and the water released by them has evaporated.
4. Pound the garlic and add it to the pan with the oregano.
5. Continue to saute for a couple of minutes.
6. Switch off the heat and add the flour.
7. Stir well to coat the mushrooms.
8. Chop the parsley and add it to the mushrooms.
9. Return the pan to low heat.
10. Add the milk stirring vigorously to ensure that no lumps are formed.
11. Cook, stirring continuously, until the mixture thickens.
12. Add the salt, pepper and half the cheese.
13. Mix well and keep warm.
14. Start cooking the pasta 15 minutes before serving time.
15. Drain the water completely.
16. Transfer the pasta to the serving dish.
17. Pour the cheese sauce over the pasta and sprinkle the rest of the cheese over the sauce.
18. Serve the pasta hot.
To Cook the Pasta:
You need to cook the pasta in plenty of boiling salted water to which 1 tsp of oil is added. To cook 2 cups of pasta use 8 cups of water. Boil the water with 1 tsp of oil and 1 tspf of salt. After 7-8 minutes, the pasta should be cooked when it feels soft, yet firm to the touch
