Ingredients:
Salmon Fillets – 300 gms, skinned, chopped
Coriander Leaves – 1 1/2 tblsp, finely chopped
Breadcrumbs – 1 tblsp, dried
Oil – 1 tblsp
For the masala:
Coriander Seeds – 1 tblsp
Fennel Seeds – 1/2 tblsp
Cumin Seeds – 1 tsp
Cloves – 1/2 tsp, whole
Black Peppercorns – 1/4 tblsp
Light Brown Sugar – 1/2 tblsp
Ginger Powder – 1/2 tsp
Garlic Powder – 1/2 tsp
Mint Leaves – 1 tsp, dried
Salt – 1/2 tsp
Method:
1. Dry roast the masala ingredients and cool.
2. Coarsely grind them and keep aside until required.
3. Mix the salmon, coriander leaves and 1 tblsp of the ground powder.
4. Add 1/2 tblsp of breadcrumbs and mix well.
5. With moistened hands, make small balls of the mixture and shape them onto the skewers.
6. Ensure it is firmly attached to the skewers.
7. Heat oil in a large pan over medium flame.
8. Place the skewers and cook for 2 to 3 minutes each side.
9. Remove and transfer to a serving plate.
10. Serve hot with mint raita or as per choice.
