Tomato Fish

Ingredients:
500 gm Rohu fish (or any carp fish), cut into 1 inch square pieces
Salt to taste
1 tsp Tumeric powder
Oil for frying
1/2 Onion, grated
1 tsp Cumin powder
1 tsp Sugar
250 gms Tomatoes, blanched and mashed
1 cup Hot water
1 tsp Coriander leaves, chopped
1 inch piece Ginger, cut into juliennes
4-5 Green Chillies, slit

Method:
1. Apply some salt and 1/2 tsp turmeric powder to the fish; set aside for 10 minutes.
2. Then heat the oil, fry the fish till half done.
3. Leave 1 tbsp oil in the pan, fry the onions, add 1/2 tsp turmeric powder, cumin powder, sugar, salt and the tomatoes, fry till the oil separates.
4. Then add the fish and cook for 3-4 minutes, add the hot water, cook on a low flame till the gravy thickens.

Serve with boiled rice garnished with coriander leaves, ginger juliennes and green chillies.
