Stuffed Mackerel

Ingredients:
Mackerels – 4, medium
Turmeric Powder – 1 tsp
Ginger Garlic Paste – 1 tblsp
Lime Juice – 2 tblsp
Dried Red Chillies – 6
Cloves – 8
Black Peppercorns – 10
Cinnamon – 1 inch stick
Cumin Seeds – 1/2 tsp
Garlic – 8 cloves, chopped
Onions – 2, medium, finely chopped
Sugar – 1 tsp
Vinegar – 4 tblsp
Oil – 2 tblsp plus some more for shallow frying
Rice Flour – 1 cup
Salt to taste

Method:
1. Clean and slit the mackerels on either side of the bone.
2. Marinate in a mixture of salt, turmeric powder, ginger garlic paste and lime juice for 20 minutes.
3. Grind the red chillies, cloves, peppercorns, cinnamon, cumin seeds, garlic and onions with sugar, vinegar and salt to a fine paste.
4. Add a little water if required.
5. Heat 2 tblsp of oil in a pan and saute the spice paste for 2 minutes.
6. Remove from heat.
7. Stuff each mackerel with 1 1/2 tblsp of the spice paste.
8. Roll the stuffed mackerels in the rice flour and shallow fry on both sides till golden brown.
9. Serve hot.
