Curry Leaves Chicken
Ingredients:
Chicken – 1/2 cup, chopped, boneless, skinless
Onions – 1 cup, finely chopped
Tomatoes – 1/2 cup, finely chopped
Green Chillies – 1/4 cup, finely chopped
Curry Leaves – 1/2 cup, chopped
Thick Coconut Milk – 1/4 cup
Garlic – 3 to 4 cloves, chopped
Salt as per taste
Coriander Leaves – few, chopped

Method:
1. Heat oil in a pan over medium flame.
2. Saute the onions and garlic for a minute or two.
3. Add the tomatoes and stir-fry for one more minute.
4. Add green chillies and chicken pieces.
5. Mix well and cook for 3 to 5 minutes or till the chicken is cooked.
6. Add curry leaves and pour 1 cup of water.
7. Add salt and bring to a boil.
8. Add coconut milk and mix well.
9. Simmer for 10 minutes till the gravy turns thick.
10. Garnish with coriander leaves.
11. Serve hot.
