Ingredients:
Basmati Rice – 250 gms, soaked for 15 minutes
Green Mochai Kottai (Dry Beans) – 1/4 cup, soaked, skin removed
Onions – 2
Tomatoes – 2, finely chopped
Green Chillies – 3
Cinnamon – 1
Clove – 1
Cardamom – 1
Bay Leaf – 1
Saunf – 1/2 tsp
Turmeric Powder – 1/4 tsp
Coriander Powder – 1 tsp
Mint Leaves – handful, chopped
Coriander leaves – handful, chopped
Ginger Garlic Paste – 1 tsp
Oil – 3 tsp
Ghee – 2 tsp
Salt as per taste
Method:
1. Soak together bay leaf, cinnamon, clove, cardamom and saunf for a few minutes.
2. Fry 1 onion directly over flame and remove the skin.
3. Grind together the fried onion, coriander powder, half of the mint leaves and coriander leaves and 1 green chilli.
4. Heat ghee and oil in a pan.
5. Add bay leaf, cinnamon, clove, cardamom and saunf.
6. Fry for 30 to 45 seconds.
7. Add the mochai and stir well.
8. Finely chop the remaining onion and add to the pan along with ginger garlic paste, turmeric powder, ground onion paste, tomatoes, green chillies, mint leaves, coriander leaves and salt.
9. Stir and mix well.
10. Pour 2 cups of water and add the rice.
11. Cover with a lid and cook till rice is done.
12. Serve hot.
