Waldorf Chicken Salad

Ingredients:

  • Red Apples – 500 gms, diced
  • Fresh Lemon Juice – 3 tblsp
  • Mayonnaise – 150 ml
  • Celery – 1 head
  • Shallots – 4, sliced
  • Garlic – 1 clove, crushed
  • Walnuts – 100 gms, chopped + some more for garnish
  • Chicken – 500 gms, lean, cooked and cubed
  • Cos Lettuce – 1
  • Pepper to taste

Method:

  1. Place the apples in a bowl with the lemon juice and 1 tblsp of mayonnaise.
  2. Leave for 40 minutes or until required.
  3. Slice the celery very thinly.
  4. Add the celery with the shallots, garlic and walnuts to the apple.
  5. Mix and then add the remaining mayonnaise and blend thoroughly.
  6. Add the chicken and mix with the other ingredients.
  7. Line a serving dish with the lettuce.
  8. Pile the chicken salad into a serving bowl.
  9. Sprinkle with pepper.
  10. Garnish with chopped walnuts.
  11. Serve.
