Greek Pasta Salad

A tasty pasta salad in classic Greek flavor with cucumber, tomatoes, red onions and olives.
Greek Pasta Salad
For the Salad:
Pasta – 500 gms (penne or fusilli)
Salt – 1 tblsp
Cucumber – 1 cup, diced
Tomato – 1 cup, diced
Red Onion – 1/3 cup, diced
Black Olives – 1/2 cup, sliced, rinsed and drained
Feta Cheese – 1 cup, rinsed and drained

For the Greek Dressing:
Red Wine Vinegar – 2 tblsp
Sugar – 2 tsp
Salt – 1/2 tsp
Pepper – 1/4 tsp
Greek Seasoning – 1 tsp
Olive Oil – 125 ml
Oregano Leaves – 1/2 tsp, dried
Parsley – 1 tsp, dried

For the Greek Seasoning:
Salt – 1 tsp
Oregano Powder – 1 tsp
Onion Powder – 3/4 tsp
Garlic Powder – 1 tsp
Cornstarch – 1/2 tsp
Pepper – 1/2 tsp
Parsley – 1/2 tsp
Cinnamon – 1/4 tsp, ground
Nutmeg – 1/4 tsp, grated

1. Heat water in a large pan over high heat.
2. Add salt and bring to a boil.
3. Add pasta and cook as per instructions on package.
4. When the pasta is cooked, drain and rinse with cold water to stop the cooking process.
5. Place the pasta in a large bowl and allow it to cool.
6. To make the Greek seasoning, mix all the ingredients and store in freezer until ready to use.
7. To make the Greek dressing,  whisk together all the ingredients except oil in a medium bowl.
8. Whisk well and add oil gradually.
9. Toss the pasta with dressing and vegetables, stirring well to coat well.
10. Cover and refrigerate until ready to serve.
11. To serve, add 1/2 cup of cheese and toss well.
12. Sprinkle the remaining cheese on top and serve.
