Okra stuffed with Spices in Yogurt Sauce

Ingredients:
Okra (Bhindi) – 500 gms, washed and dried
Red Chilli Powder – 1 tsp
Cumin Powder – 1 tsp
Coriander Powder – 1 tsp
Oil – 1/2 tsp
Onions – 2, chopped
Tomato – 1, chopped
Water – 1/4 cup
Salt – 1/2 tsp
Plain Yogurt – 1/4 cup, thick

Method:
1. Make a slit along the length of each okra.
2. Mix the red chilli powder, cumin powder and coriander powder in a bowl.
3. Stuff the okras with this mixture and keep aside.
4. Heat oil in a pan.
5. Saute the onions for about 5 minutes and add the stuffed okras.
6. Cook for 5 more minutes.
7. Add the chopped tomatoes and water.
8. Cover with a lid and let it simmer over medium heat for 12 to 15 minutes, until okra is tender.
9. Add the salt and any leftover spice mixture.
10. Remove from heat.
11. Beat the yogurt to a creamy texture.
12. Pour over the okra and serve at once.
