Stuffed Zucchini

Ingredients:
Zucchini – 4, medium
Olive Oil – 1 tblsp
Onion – 1, chopped
Garlic – 1 clove, minced
Tomatoes – 2, diced
Rice – 1 cup, cooked
Breadcrumbs – 2 tblsp
Chilli Powder – 1/4 tsp
Lime Juice – 1 tblsp
Salt – 1/4 tsp
Spicy Tomato Sauce – 1 cup

Method:
1. Cut each zucchini in half lengthwise.
2. Scoop out the insides.
3. Finely chop the flesh and keep aside.
4. Heat oil in a pan.
5. Saute the onion and garlic for 5 minutes over medium heat.
6. Add the chopped zucchini flesh and tomatoes.
7. Cook for 2 to 3 minutes.
8. Add the rice, breadcrumbs, chilli powder, lime juice and salt.
9. Cook for 2 minutes until well mixed.
10. Fill each zucchini shell with the stuffing.
11. Cover and bake in a preheated oven for 35 to 45 minutes.
12. Serve hot with spicy tomato sauce.
