Chettinad Vendakkai Sadam (Bhindi Rice)

Ingredients:
Bhindi (vendakkai) – 10, chopped
Cooked Rice – 1 cup
Tamarind Extract – 1 tblsp, thick
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1 tsp
Dry Red Chillies – 4
Bengal Gram Dal – 1 tsp
Cinnamon – 2
Cashewnuts – 10
Mustard Seeds – 1 tsp
Curry Leaves – few
Oil – 1 tblsp
Salt as per taste
Coriander Leaves – few, to garnish

Method:
1. Heat oil in a pan.
2. Saute the chopped vendakkais for 2 minutes.
3. Add turmeric powder, salt, tamarind extract, red chilli powder and mix well.
4. Reduce flame to low and cook until the bhindis are evenly coated.
5. In a separate pan, fry the mustard seeds, bengal gram dal, dry red chillies, cashewnuts, cinnamon and turmeric powder in little oil until golden.
6. Add the curry leaves and cooked rice.
7. Mix well and reduce flame to low.
8. Add the cooked bhindi masala and mix.
9. Simmer for 4 to 5 minutes.
10. Garnish with coriander leaves.
11. Serve hot.
