Crab Curry with Peanuts

Ingredients:
Crabs – 4, medium, cleaned and prepared
Oil – 4 tblsp
Onion – 1, chopped
Peanuts – 2 cups, roughly pounded and roasted
Tomato – 1, large, peeled and diced
Ginger – 1 tsp, grated
Garlic – 1 tblsp, finely chopped
Cardamom Powder – 1 tsp
Coriander Powder – 1 tsp
Cumin Powder – 1 tsp
Aniseed Powder – 1 tsp
Chilli Powder – 2 tsp
Turmeric Powder – 1 tsp
Lime Juice – 2 tblsp
Sugar – 2 tsp
Garam Masala Powder – 1 tsp
Toddy – 1/2 cup
Salt as per taste

For the Marinade:
Turmeric Powder – 1 tsp
Lime Juice – 1 tblsp
Salt – 1/2 tsp

Method:
1. Mix the marinade ingredients and rub into crabs.
2. Let the crabs marinate for 15 to 20 minutes.
3. Heat oil in a flat pan over medium heat.
4. Add onions and fry until golden brown.
5. Add peanuts and fry for 2 minutes.
6. Add the rest of the ingredients, except toddy and crabs.
7. Fry for 3 minutes.
8. Add 4 cups of water, cover and cook for 5 minutes.
9. Add marinated crabs along with the marinade and some water.
10. Cover and cook for 20 minutes until the crab flesh is opaque.
11. Remove from fire.
12. Add toddy and keep covered for 2 minutes.
13. Garnish with spring onions.
14. Serve hot with plain rice.
