Tamarind Coriander Chutney

Ingredients:
Coriander Leaves – 500 gms, washed and drained
Oil – 3/4 cup
Asafoetida – 1/2 tsp
Turmeric Powder – 1/4 tsp
Salt as per taste
Green Chillies – 10 to 12
Coriander Seeds – 1/4 to 1/2 tsp
Cumin Seeds -1/2 to 3/4 tsp
Thick Tamarind Pulp – 3/4 to 1 cup
Jaggery – 1 1/2 tsp

For Seasoning:
Dry Red Chillies – 3 to 4
Curry Leaves – 5 to 6
Mustard Seeds – 1/2 tsp

Method:
1. Heat 1 tsp of oil in a pan.
2. Fry the asafoetida, green chillies, coriander seeds and cumin seeds.
3. Grind together jaggery, tamarind pulp, turmeric, salt and coriander leaves.
4. Fry the seasonings in little oil till dark brown.
5. Mix all the other ingredients.
6. Fry together for a few minutes.
