Gazpacho is a cold Spanish tomato-based raw vegetable soup.
Tomatoes – 750 gms, finely chopped
Tomato Puree – 1 tblsp
Red Wine Vinegar – 2 1/2 tblsp
Olive Oil – 1 tblsp
Red Chilli Sauce – 1 tsp
Cucumber – 1, large
Yellow Capsicum – 1
Onions – 1/4 cup, minced
Salt – 1 1/2 tsp
Freshly Ground Black Pepper – 1/2 tsp
Lime Wedges – 4
Coriander Leaves – 1/2 cup, chopped

1. Add the tomatoes, tomato puree, vinegar, oil and chilli sauce to a bowl.
2. Blend the mixture to a smooth puree.
3. Place in the fridge until ready to serve.
4. Peel and cut the cucumber into quarters lengthwise.
5. Scoop out and discard the seeds.
6. Chop it fine.
7. Cut the capsicum in half.
8. Remove the seeds and inner pith and discard.
9. Chop the capsicum fine.
10. Chop the onion finely.
11. Add the cucumber, capsicum and onion to the blended soup.
12. Mix well and replace in the fridge.
13. Serve the soup cold in small bowls.
14. Garnish with lime wedge and coriander leaves.
