Apple Cake

Apples – 2 cups, diced
Refined Flour (Maida) – 1 cup
Salt – a pinch
Baking Powder – 1/4 tsp
Soda Bicarbonate – 1 1/2 tsp
Cinnamon Powder – 1/2 tsp
Nutmeg Powder – 1/2 tsp
Clove Powder – 1/4 tsp
Eggs – 2
Honey – 1/2 cup
Vanilla Essence – 1/4 tsp
Vinegar – 1 tbsp

1. Grease a 9” ring mould and dust with flour.
2. Sift the refined flour, salt, baking powder and soda bicarbonate.
3. Mix in the spices.
4. Beat the eggs till creamy.
5. Add the honey and mix well.
6. Fold in the flour mixture, a little at a time.
7. Add 1 to 3 tbsp of water, if necessary, to obtain a dropping consistency.
8. Add the apples, vanilla essence and vinegar.
9. Mix well and transfer the cake mixture to the prepared ring mould.
10. Bake at 180C for around 35 minutes or until the cake is done.
