Fresh Pear Cake

Ingredients:
Pears – 4 cups, chopped and peeled
Granulated Sugar – 2 cups
Nuts – 1 cup, chopped
All Purpose Flour – 3 cups
Baking Soda – 2 tsp
Salt – 1/2 tsp
Ground Cinnamon – 1/2 tsp
Ground Nutmeg – 1/2 tsp
Eggs – 2
Vegetable Oil – 1 cup
Vanilla – 1 tsp
Powdered Sugar for Garnish

Method:
1. Preheat oven to 375F.
2. Grease and flour a 10 inch tube pan.
3. Combine pears, granulated sugar and nuts.
4. Mix lightly.
5. Let it stand for 1 hour, stirring frequently.
6. Combine flour, baking soda, salt and spices. Set aside.
7. Beat eggs in large bowl.
8. Blend in oil and vanilla.
9. Add flour mixture, mix well.
10. Stir in pear mixture.
11. Pour into prepared pan, spreading evenly to edges.
12. Bake for 1 hour and 15 minutes or until wooden pick inserted in center comes out clean.
13. Cool in pan on wire rack for 10 minutes.
14. Loosen edges and remove to tack to cool completely.
15. Dust lightly with powered sugar just before serving, if desired.
