Stuffed Crabs

Crabs – 8, medium
Butter – 1 1/2 tblsp
Spring Onions – 1 cup, chopped
Turmeric Powder – 1/4 tsp
Chilli Powder – 1/2 tsp
White Pepper Powder – 1/2 tsp
Tomato Puree – 2 tblsp
Sugar – 1/4 tsp
Cheese – 1 1/2 tblsp, grated
Chicken Stock Cube – 1, optional

1. Boil the crabs and remove the meat from the shells.
2. Select four crab shells. Wash and wipe dry.
3. Heat the butter in a pan and saute the spring onions till they change colour.
4. Add the crabmeat, turmeric and chilli powders, white pepper powder, tomato puree, 1 tblsp of cheese, sugar and chicken stock cube.
5. Saute well for a few minutes.
6. Stuff the four shells with the cooked crabmeat and sprinkle the remaining grated cheese.
7. Place the shells on a baking tray and bake in a hot oven for 2 minutes till the cheese melts.
8. Serve hot.
