Angel Food Cake

Ingredients:
Cake Flour – 1 1/4 cups, sifted
Sugar – 1 1/3 cup plus 1/2 cup, divided
Egg Whites – 12
Cream of Tartar – 1 1/4 tsp
Salt – 1/4 tsp
Vanilla – 1 tsp
Almond Extract – 1/4 tsp
Fresh Strawberries for serving (optional)

Method:
1. Preheat oven to 350F.
2. Sift together flour with 1/2 cup of the sugar 4 times.
3. Beat egg whites with cream of tartar, salt and flavorings in a large bowl at high speed with electric mixer until stiff peaks form.
4. Gradually add the remaining 1 1/3 cups of sugar, mixing well after each addition.
5. Fold in flour mixture.
6. Pour into ungreased 10 inch tube pan.
7. Bake for 35-40 minutes or until cake springs back when lightly touched with finger.
8. Invert pan and allow cake to cool completely in pan before removing from pan.
9. Serve with strawberries, if desired.
