Green Mango Rice is a tangy and delightful dish made with green mangoes and spices. The advent of summer sees the abundance of mangoes and many people are not sure what to do with them. Here is a quick and fun recipe which uses any leftover rice with green mango.

Also known as Mangai Sadam, this dish is very popular in South India. It is super easy to make and does not take a lot of time and requires the common ingredients from the kitchen. Ideal for a quick lunch or dinner.

Ingredients

  • 1 Green Mango
  • 1/4 Dry Coconut (Kopra)
  • 1 tbsp Chana Dal
  • 1/2 tbsp Oil
  • a pinch Turmeric Powder
  • as per taste Salt
  • 2 Green Chillies chopped
  • 1/2 tsp Cumin Seeds
  • 1 tsp Coriander Seeds
  • 1/4 tsp Fenugreek Seeds
  • 1 tbsp Roasted Peanuts
  • 2 cup Rice

For the Seasoning:

  • 3 Dry Red Chillies
  • 1/2 tsp Mustard Seed
  • 1/2 tsp Urad Dal
  • 4 Curry Leaves
  • 1/4 tsp Asafoetida

Instructions

  • Cut the mango and coconut into small pieces.
  • Keep them separately.
  • Boil the chana dal in water till tender.
  • Dry roast the cumin seeds, coriander seeds and fenugreek seeds separately.
  • Grind each separately.
  • Powder the groundnuts.
  • Boil rice and spread on a cloth to dry.
  • Heat oil in a pan.
  • Add salt, turmeric powder, ground spices and mango pieces.
  • Add to the rice with cooked chana dal, groundnut powder, coconut and green chillies.
  • Heat oil and fry the seasoning ingredients till dark brown.
  • Add them to the rice and mix well.
  • Serve hot.
