Ingredients for Green Mango Rice
1Green Mango
1/4Dry Coconut (Kopra)
1tbspChana Dal
1/2tbspOil
a pinchTurmeric Powder
as per tasteSalt
2Green Chillies chopped
1/2tspCumin Seeds
1tspCoriander Seeds
1/4tspFenugreek Seeds
1tbspRoasted Peanuts
2cupRice
For the Seasoning:
3Dry Red Chillies
1/2tspMustard Seed
1/2tspUrad Dal
4Curry Leaves
1/4tspAsafoetida
How to make Green Mango Rice
Cut the mango and coconut into small pieces.
Keep them separately.
Boil the chana dal in water till tender.
Dry roast the cumin seeds, coriander seeds and fenugreek seeds separately.
Grind each separately.
Powder the groundnuts.
Boil rice and spread on a cloth to dry.
Heat oil in a pan.
Add salt, turmeric powder, ground spices and mango pieces.
Add to the rice with cooked chana dal, groundnut powder, coconut and green chillies.
Heat oil and fry the seasoning ingredients till dark brown.
